That’s right people, zuchinni blondies, and they are vegan too! Last week in Fire Island, my husband’s friends rented a house for the week. Erin and Marcus have a veggie garden on Long Island and I was the proud recipient of their leftover unused fresh produce. Of course there was a bevvy of zuchinni, um…about [...]

Banana Coconut Bread

Growing up, my mom made a lot of banana bread and we all loved it. Over the years, along with the conflicting nutritional news/fads/trends, the recipe changed slightly as well. Originally, the recipe used butter. When butter became the nemesis of the American public, margarine replaced it. When fat in general became the newest public enemy, [...]

Now that’s a long name for a muffin. They are true tropical muffins in every sense, even down to the Tahitian vanilla. Let me preface the recipe by saying that I eat my own granola 98% of the time for breakfast. The other one percent of the time I can be seen devouring a bagel with [...]
Banana Espresso Coconut Smoothie

Wow, 2 posts in one day! This was a whopper of a breakfast smoothie! I have run out of granola so I had to get creative this morning. I had a banana in the freezer, a shot of leftover espresso from yesterday, and of course the container of diluted coconut milk that I always have [...]
Applesauce Crisp Cake

So awhile ago I made my own applesauce after I bought a slew of Macoun apples from my local farmer’s market in Islip, NY. This was about a month ago and needless to say, I have had the applesauce rolling around in my fridge ever since. I had good intentions of making potato parsnip pancakes as a pre-Hanukkah usage of the extra, but I never got around to it. I also did not get around to making my granola so I was out of breakfast for tomorrow. I have spent today paging through my cooking journals and cookbooks trying to figure out what to make for Christmas dinner at my Mom’s in a few days when I came upon a recipe for an apple cake in the book Get it Ripe by Jae Steele. If you are reading this, I strongly urge you to run out and buy her book right this second. It’s amazing and she has also won an award for it.

I know, the title does not make it sound very appetizing but I can assure you, it is divine. It is also a perfect ending to the previously posted summer rolls. It can also double as a lovely whole grain breakfast (add some ground flaxseed and some more fruit-I added some pomegranate seeds). This recipe [...]
Lemon Meringue Granola

I’ve been making my own granola for my breakfast for about a year now. In the past I have always had a problem with breakfast. In middle and high school I was usually stressed out in some way and worried constantly about how others thought of me in addition to the usual other myriad of things [...]

So, after much procrastination and “bloggers fear”, I am publishing my first post. I am not so sure what I am so afraid of! Am I afraid of people seeing or not seeing my blog? In any case, here it is.
After wimping out of my daily run (it’s starting to get cold in Long Island) [...]
